Fanta cake

Fanta cake
It has such a name because for the jelly topping we have to use Fanta orange juice.

For the sponge I used 4 eggs, 8 tablespoons of caster sugar, 5 tablespoons of all purpose flour, 2 tablespoons of cocoa powder, 100 ml sun-flower oil (this is about 3 tbs), 1 tea-spoon of baking powder, essence of rum.

For the cream cheese use: 500 g cottage cheese (not salty), 7 tablespoons of powdered sugar, 200g of unsalted butter, vanilla.

For the Fanta jelly you need: 70 g of vanilla pudding powder, 6 tablespoons of caster sugar, 1000 ml of Fanta, and optionally, for a stronger flavour, some orange zest. You may use natural orange juice instead of Fanta, but then, the name of this cake would be different :)

Method of preparation :

Firstly, preheat the oven at about 180 Celsius degrees and the prepare the baking pan you need, a square, round or rectangular one, lined with baking paper (I used a round baking pan with detachable walls of  28 cm diameter. Any pan you may use, it needs to have detachable walls for the orange jelly). Mix the eggs well at high speed, then add sugar and go on with mixing until the composition looks creamy. Then add one by one the other ingredients mixing at low speed the oil, baking powder, rum essence, cocoa powder and finally the flour.

When everything is well mixed put the composition in the formerly prepared tray and leave it in the oven for about 40 minutes. It is ready when you insert a toothpick in it and it comes out dry. When the sponge is ready get it out from the oven and from the baking pan, paying attention not to tear it, and let it aside, in the same pan, to cool down.

The cream preparation: mix the butter with the powdered sugar and vanilla sugar (or essence) until everything becomes a fluffy cream then add the cottage cheese (or any cheese you like, you can also use mascarpone and I'm sure it would be much better that way). Mix at medium speed until the cheese is well incorporated in the cream then leave it in the fridge or in a cool place.

The jelly: put the vanilla pudding powder in a kettle and mix it with about 100 ml of Fanta. The remaining 900 ml, together with the sugar goes to a pot on the cooker, at medium heat until the juice starts to boil and the sugar dissolves completely. Then pour the pudding powder from the kettle over the boiling Fanta syrup and stirr continuously until the jelly thickenes. Then set aside to cool down.

 Then set the cake: spread the cream form the fridge on the sponge and level it. The pour the Fanta jelly and level it well. Leave the cake in the fridge or in a cool plave for at least 5 hours, but better overnight. When you serve, cut the cake into smaller portions. It is fluffy and tasty, and if you are asking me, it is one of the best cakes I have ever eaten.
